Cucumber Fish Tacos



Happy New Year taco fans! I am all rested up and filled with restaurant tacos - the joys of visiting home for the holidays. Between La Carnita and Mex-i-can, I have a head full of recipe ideas and a belly full of food. Too much food. So to start the year off right, I've created a healthy, crisp and quick recipe to ease you out of overindulgence-mode.

Cucumber Fish Tacos

Serves: 8 tacos             Prep Time: 2 minutes             Cook Time: 5 minutes

2 tilapia filets
2 tbsp vegetable oil
1 tsp lime juice
Ground coriander to taste
Garlic powder to taste
Salt and pepper to taste

Cucumber
Daikon
Cilantro
Crema
Lime juice
Corn Tortilla

Prep It

Heat the oil in a non-stick skillet on medium-high. Season the tilapia with the spices. Place the tilapia in the oil, add the lime juice and fry on each side for about 2 minutes.

Serve It

Roughly chop the cucumber, daikon and cilantro - toss with lime juice. Cut the tilapia into strips and place in a warm corn tortilla with the vegetables and a dollop of crema.
